Whether you’re starting fresh with simple ingredients or using up leftover chicken and veggies from the holidays, this recipe is an easy, flavorful way to transform what’s in your fridge into a dish the whole family will love!
Ingredients:
1 lb boneless, skinless chicken breasts, diced
1 cup diced carrots
1 cup frozen peas
1/2 cup diced celery
1/3 cup butter
1/3 cup all-purpose flour
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 3/4 cups chicken broth
2/3 cup milk
1 package refrigerated pie crusts
Instructions:
Prepare the Filling:
Preheat the oven to 425°F.
In a large skillet, melt butter over medium heat. Add flour, onion powder, salt, and pepper. Stir until smooth and bubbly. Gradually add broth and milk, whisking until thickened.
Cook the Chicken and Veggies:
Stir in diced chicken, carrots, peas, and celery. Let simmer for 5-7 minutes until chicken is cooked through and vegetables are tender.
Assemble the Pie:
Roll out one pie crust into a 9-inch pie dish. Fill with the chicken mixture. Top with the second crust, seal edges, and cut small slits on top to vent.
Bake:
Place the pie on a baking sheet to catch any drips. Bake for 30-35 minutes, or until the crust is golden brown. Let cool for 5 minutes before serving.
